Matt Janney, Telluride Ski & Golf’s new corporate chef brings a background of immense experience and innovation to the Resort. From working with Chef Allan Jackson of Jackson Catering in Los Angeles on events like The Emmys, to Director of Operations of Pizza Rustica based in Miami Beach, Florida with 23 locations worldwide, Janney is nothing short of a culinary expert. He has worked in both fine dining and fast casual environments showing his versatility as a chef.
According to Janney, “At the age of 12, I told my parents that I’m was going to be a chef.” Janney did indeed start young, opening his first restaurant at age 21 in Washington, DC called The Inn at Glen Echo that served regional New American Cuisine.
After leaving Glen Echo, Janney started experimenting with creating retail foods for stores helping create a line of shelf stable salad dressings called “Salad Shots,” the first salad dressing line made with no chemicals to expand shelf life, but instead using vitamins. When he returned to the restaurant business, Matt was hired to help create a Fast Casual healthy food concept called Fresh Griller located in Southern California, using all Farm to Table ingredients as well as all menu items made from scratch at each location.
Before taking the job at Telluride Ski Resort, Janney was the executive chef at Sorrel River Ranch & Spa, an upscale five-diamond resort located in Moab, Utah. There, he enjoyed having his own farm on property to create rustic fine dining food.
What Janney lacked in his exciting career he said was a sense of community. When he visited Telluride for the first time in 2007, he fell in love with the community of Telluride and was excited about the opportunity to work for Telluride Ski & Golf. Working at The Peaks Resort & Spa, Janney is excited about the enormous potential of the property. “I’m excited about the restaurant spaces we have here, we have kitchens attached to dining rooms with amazing views of mountains,” Janney told us. Matt’s vision is to use all of the kitchen spaces efficiently and continue to get the word out about how great the food is. Matt said, “I want the quality and consistency of the food to continue to elevate.”
